La Franquicía is a seasonal dining experience centered around a single 12-seat table.

 

 Each menu is shaped around a mood, moment, or idea from the Chef; translated through a multi-course tasting that unfolds gradually throughout the evening. The format remains simple: one table, one seating, one shared experience.

 

Guests are seated together, creating a natural rhythm between the kitchen and the room. Conversation is encouraged, but never required—allowing the evening to flow at its own pace.

 

La Franquicía is less about defining a cuisine, and more about evoking a feeling: intentional, intimate, and quietly unforgettable.

Our Chef

La Franquicía is led by Chef Fran, whose experience and deep respect for food shape every part of the experience. With a focus on thoughtful technique and seasonal, locally sourced ingredients, he creates dishes that feel both refined and grounded. Each plate is built with intention, balancing flavor, texture, and creativity, turning simple ingredients into a dining experience that feels elevated without ever feeling fussy. There is a sense of honesty in the way the food is prepared, letting the ingredients speak for themselves while still carrying a quiet sense of craft.

 

At its core, Chef Fran’s approach is about more than technique or presentation. It is about food that tells a story, food that feels lived in, and food that brings people to the table in a real way. Nothing unnecessary, nothing forced, just thoughtful cooking meant to be shared and remembered.
